Protein & Fiber – Chocolate Chip Flaxseed Muffins


It is imperative to keep a high fiber diet while consuming large amounts of protein.  The fiber helps to slow the insulin spike while also helping you digest the proteins through your digestive tract.  The chocolate?  Well, happy people are beautiful right?  And chocolate makes me happy therefore beautiful.  There’s my reasoning.  Enjoy!
Preheat oven to 350.

1 cup of wheat flour
1/4 cup of coconut flour
2 TBSP Flaxseed milled
1 tsp baking soda
1 scoop of protein powder
1 cup of unsweetened almond milk (I use So Delicious Almond+)
1 tsp of vanilla extract
1 tbsp of agave
1/2 cup of dark chocolate chips


Spoon into nonstick muffin pans and tada! Cook for 15 to 20 min and check the middle. It could cook quicker depending on how thick your muffin batter is and how much liquid you use – as always eyeball it and add more or less of anything to your liking.  This recipe just happened to hit my macros for the day.
