Day Numero Uno!
This is what today (which is technically two days ago because I started blogging late) looked like for me:
Breakfast: 3 Egg Omelette with tomatoes, onions, coconut oil, and salt. 8 Strawberries, raw. Green Tea.
Lunch: Lemon-Cranberry Shrimp & Broccoli (Recipe below)
Snack: 2 Oranges
Post-Workout: 1 Banana
Dinner: Lemon-Cranberry Shrimp & Broccoli (I prepped enough for two to three meals)
Snack: Raw Almonds
Lemon-Cranberry Shrimp & Broc Recipe
1/2 yellow onion
3-4 large stalks of fresh broccoli
2 TBSP coconut oil
2-3 servings of pre-cooked shrimp (defrosted)
1/4 cup of dried naturally sweetened cranberries
1/2 lemon yields juice
Place your coconut oil in the pan on medium-high heat . Chop your onions while it is heating up and then add when it is beginning to sizzle. Chop the broccoli into bite-sized pieces and add it to the oil and onions. Add some water if the broccoli seams dry and allow it to steam for 4-5 minutes. Rid the pan of excess water and add the shrimp to the pan along with the cranberries and lemon juice. Cook for another 4-5 minutes and salt and pepper to taste.
