Whole 30 – Day Twelve

I work 7am to 7pm today and needless to say I need to pack a ton of food to not be tempted by pizza. It was kind of a rough start, considering the pup pooped on our floor because she hates the cold weather (bad girl), but I am getting through it. Here’s the goods, yo.

Breakfast: Leftover Salmon Fritatta w/ 1/4 Avocado, Green Drink.

Lunch: Coconut Shrimp (Homemade Paleo) & Zoodles (recipe below)

Snack: Larabar Cherry

Dinner: Shrimp and Zoodles Saute

Snack: Fruit Salad and Almond Butter

Snack: 2 Clementines

I also broiled the coconut shrimp after I fried them to make sure the batter was nice and crispy πŸ™‚

Paleo Coconut Shrimp and Zoodles
Serves 2-3
15 Jumbo Shrimp (thawed)
2 TBSP Coconut Oil
2 TBSP Coconut Flour
1 TBSP Almond Flour
Seasoning (I used Flavor God Everything)
2 tsp Salt
Coconut flakes if you want them.
2-3 Yellow or Green Zucchinis

Set pan on high heat and add the oil. Dip your shrimp in the dry ingredients above and once covered immediately fry. Fry on each side until golden brown. Set them under a broiler on high for a few minutes to make it crispier if you prefer.

Zoodles: use your spiralizer to make the noodles and add them to a nonstick pan with whatever veggies you like and season to taste. I used flavor god again with scallions. Bon apetit.
