Mhmmm it is almost spring in my hemisphere and a girl could not be more stoked than I am over it. A celebration twas in order so I made a batch of refreshing chia seed pudding with all of the works. Here is the recipe for a quick, on-the-go breakfast parfait or clean cheat if you are craving a dessert!
Coconut Chia Seed Pudding
1/2 cup of chia seeds
2 cups of coconut milk (unsweetened)
1-2 tbsp of a natural sweetener (maple syrup, honey, etc).
Toppings: berries, nuts, fruits of choice.
Combine the seeds, coconut milk, and sweetener in a bowl and whisk it. You are now going to cover it an let it sit over night. The seeds will expand and create a jelly-like substance when they are submerged in liquid and it makes a very filling snack.
