Blasphemous is what some people would say about my Meatless Carbless Spaghetti, but do I care? Nope. The secret to successfully losing weight is to make sure you are satisfied and enjoying your favorite foods in a healthier fashion. This is a take on my Mom’s spaghetti we use to eat all the time when I was a kid – it is an Americanized version of Italian food with a vegan twist. Plus, it takes less than ten minutes to prep, cook, and serve. The secret of making this dish taste great and not like blah-zey, second-hand Italian food is a ton of seasoning and sauteed veggies. Then again, isn’t that the secret to every good Italian dish?
Meatless Carbless Spaghetti
1 package of NoOodle or Shiritake Noodles
1 Tofurky Italian Sausage
1/2 cup of shitake mushrooms
1 Roma tomato
1 tbsp of olive oil
1/2 red onion
Direction: Heat olive in pan on medium heat. Chop your veggies and sautee all of them for 3-4 minutes. Add your shiritake noodles and sautee for another 2-3 minutes. Add the chopped sausage and let it simmer until the piece are thoruoughly warm. Season to taste and serve!
