One of my favorite things in the whole world is Indian food. I love curry and samosas and naan and chickpeas and everything. Absolutely everything. It is great because I never feel awkward going out for Indian food because the majority of it is vegetarian, which means I get to sit and eat with my friends without being stuck with a piece of lettuce between two buns. Here is a healthier vegan take on one of my old favorites – tikka masala.
Beyond Meat Lightly Seasoned Chicken (3 servings)
8oz Tomato Sauce
1/2 Cup of Chickpeas
1/2 Cup of Coconut Milk
4 TBSP Garlic
1 TBSP Olive OIl
Seasoning (You can buy tikka masala seasoning or flavor it as you’d like it to be).
Heat the olive oil on medium heat and sautee the garlic and onions for two minutes. Add the sauce, coconut milk, and garbanzo beans. Simmer for two minutes. Add the fake chicken and seasonings. Cook for 10-12 minutes until it becomes thick in texture. Add water if you’d like it thinner, but I personally prefer mine a little chunky. Serve with rice and garnish with scallions and cilantro.
