Vegan Homemade Chipotle Bowl

chipotleRaise your hand if you love Chipotle. Chipotle, despite being cheap Mexican food, has exploded into a cult-like following the last couple of years. Sadly, they are not open 24 hours (yet) so sometimes alternatives must be found to satisfy one’s cravings. Below, I have crafted a homemade, high-protein, vegan alternative to Chipotle if you are really hankering for it. It yields a whopping 26g of protein per serving and it tastes effing delicious. This is not a soy free recipe so if you are allergic or not into the soy scene, I apologize – and to those down for the soy, please see below for the ingredients and recipe.


1 Package of Beyond Meat Beef Crumble

1 Cup of Edamame

1/2 Can of Black Beans

1/2 Orange Pepper

1/2 Yellow Pepper

1 Tbsp Coconut Oil

1 tsp Garlic

1/2 Onion

Taco Seasoning of Choice

Directions: Heat a pan on medium heat and add your oil, garlic and onions. Let it simmer for three minutes while you chop your other veggies. Add the frozen beef crumble to pan along with the edamame if it is also frozen. Let is cook until it has thawed and is warm. Add in your remaining vegetables, beans, and seasonings. It should be done within 12 to 15 minutes. Serve over rice or noodles and feel free to slather on some guacamole and other toppings like cilantro and lettuce. Enjoy!
